Pumpkin Waffles (GF/ Vegan/ Oil free)

These are definitely a new favorite in my house this holiday season.
Recipe⬇️
Wet Ingredients:
1 ripe banana
1/2 cup apple sauce
1/4 cup pumpkin purée
1 cup almond milk (or any plant based milk) + add 1 tbsp lemon juice
1 tsp vanilla extract
Dry ingredients:
2 cups GF oat flour
1 tsp baking powder
1/4 tsp sea salt
1 tbsp pumpkin spice
1/4 cup coconut sugar
Instructions:
In a medium sized bowl add all wet ingredients and mix well then set aside.
In a large bowl add dry ingredients and mix. Then add in the wet ingredients to the dry, and mix well. Add a splash of almond milk until you get a more liquid consistency.
Using a ladle, add the batter to a nonstick waffle maker. Serve with mixed berries (or your favorite toppings) add a splash of maple syrup & Enjoy! 🤍
